The Perfect Paleo Chocolate Chip Cookie
My family and I try to eat paleo for about 70-80% of our week and for the most part I can push through even in my most carb-craving of days. My one vice has always been when it comes to dessert, more specifically, chocolate. I have a crazy, chocolatey, sweet tooth.
Then a couple of months ago, something amazing happened. I was at my in-laws' home while they were doing paleo as well and my mother-in-law introduced me to the magnificence that was the paleo chocolate chip cookie.
Let me just be transparent, I bake these bad boys almost once a week and I don't feel bad about it, not one bit. FYI, all of these ingredients but the almond flour can be found for crazy cheap at Aldi!
Now, allow me to share the wealth!
- 3 cups of almond flour (although almond flour is pricey, try Bulk Nation, it's the cheapest I have found to date)
- 1 teaspoon of baking soda
- 2 large eggs
- 1/4 cup of maple syrup
- 1 teaspoon of vanilla extract
- 1/2 cup of coconut oil
- 1 1/2 cups of dark chocolate chips
Preheat oven for 375 degrees. Mix ingredients together, fold in the chocolate chips, and bake on parchment paper for 13-17 min depending on how moist or crispy you like your cookies.
