My Current Ride-or-Die Paleo Veggie Side
I'm not gonna lie, eating Paleo-friendly meals has been a struggle for me, let alone finding healthy veggie sides that were both tasty and allowed on the diet. I was on a quest, my friends, to find something easy and filling with decent ingredients.
Let me be the first to say, I'm a simple kind of gal. Up until a couple months ago, my husband did the majority of the cooking. He was darn good at it too, and still is. However, being a newly minted SAHM, I wanted to rise to the challenge and contribute as most I could at home. Thus beginning my first (serious) attempt at cooking (anything other than cajun, which my husbands kill. If it's not broke, don't fix it, right?). I needed something that I felt like I could maneuver and serve with confidence.
So I toiled, surveyed the farmers market on several Saturdays, and finally set my sights on the delightfully orange sweet potato. So here it is ladies and gents, the wonderful side that gives me all the beta-carotene my little body needs.
- 2 medium-sized sweet potatoes cut into small cubes
- 1 tablespoon of olive oil
- Salt & pepper to taste
- Italian seasoning to taste
Place all ingredients in a mixing bowl and stir, then spread into one layer on a lined baking sheet. Place sheet in the oven for 25 minutes at 350 degrees...and voilá.
